Vinegar Fermentation
We produce our Pure Irish Raw Apple Cider Vinegar with 100% undiluted apple cider which is transformed into cider vinegar while carefully nurturing beneficial microbes known as ‘the Mother’.
Using the Orleans method, which dates back to the Middle Ages, we rely on a slow fermentation process in oak barrels, giving our Apple Cider Vinegar a unique flavour and qualities.
Our raw, unpasteurised and unfiltered Ballyhoura Apple Cider Vinegar is a 100% natural product, carefully nurtured by our expert team.

100% Natural Ingredients
Raw and unpasteurised, Apple Cider Vinegar contains what is known as the Mother culture, which makes the vinegar appear somewhat cloudy. It is the Mother that is full of raw enzymes and gut-friendly bacteria that promote health, healing and well-being.
Our raw Apple Cider Vinegar is made from 100% pure undiluted apple juice which undergoes a double fermentation process. This produces enzymes and preserves many of its health-promoting characteristics.
Although there is no prescribed way to consume Apple Cider Vinegar, normally people take one to two teaspoons a day mixed with tepid water, raw honey or fresh juice, in the morning or before meals.
Vinegar through the Ages
Vinegar has been used for thousands of years all over the world. Seven thousand years ago the Babylonian civilisation used date palm fruit to make wine and vinegar.
Five thousand years ago the Egyptians were making vinegar. Three thousand years ago the Chinese were making rice vinegar.
From ancient Greece and Rome to 20th century folk medicine, vinegar has been used in a range of ways through the ages, from food to remedies and beauty treatments. Our Apple Cider Vinegar carries on a tradition of creating a 100% natural product, which also has great flavour.

The flavours of all the ingredients come through beautifully, each speaking for themselves and yet holding well together. This is truly delicious.
